Sumibiyaki

SUMI

With a name derived from sumibiyaki, meaning charcoal fire cooking, Sumi elevates the art of the grill. Carefully selected seasonal ingredients are cooked over open flames and the subtle depth of Japanese binchōtan charcoal is used as both seasoning and spice, every meal complemented by uninterrupted views of Tokyo Tower and the Azabudai skyline beyond.

Omakase ‘Tomoshibi’

Charcoal-Scented
Pot-Cooked Rice

Fine seasonal ingredients are used to prepare a special pot-cooked rice each month. Currently it features organically grown rice from Shiga Prefecture, prized for its gentle sweetness and plump texture. Here it’s finished with glowing charcoal to impart a delicate aroma that enhances both its toasty notes and natural umami.

Omakase ‘Tomoshibi’

Handcrafted Soba

Midway through the omakase course, guests are invited to enjoy freshly handcrafted soba noodles prepared by our head chef. Served with a fragrant broth featuring Sakura shrimp and other fresh ingredients, each bowl pairs the essence of the season with the deep natural aroma and flavour of buckwheat.
