Tiger Pufferfish Rice
Reflecting Sumi’s modern take on charcoal-grilled cuisine, seasonal Tiger Pufferfish Rice joins the Omakase Tomoshibi multi-course menu. Cooked in a clay pot and topped with lightly deep-fried tiger pufferfish, the rice is finished with garland chrysanthemum and yuzu, as a subtle nod to the season.
